Wowder Banana Oat Muffins

Wild blueberry recipe muffins

Wowder Banana Oat Muffins 
 
2 tbsp Wowder (wild blueberry powder)
1.5 cups steel-cut oats
0.5 cup gluten-free flour 
2 ripe bananas 
2 eggs or 4 tbsps unsweetened applesauce
1 cup plain Greek yogurt
2 tbsp natural sweetener like wild blueberry honey, organic honey or agave syrup
0.5 tsp baking soda
1.5 tsp baking powder
1 tsp vanilla extract
A pinch of sea salt 
Optional *2 tbsp of organic honey pollen as garnish*
 
Mix all the wet ingredients in one bowl and the dry ingredients in another. Combine the two mixtures then spoon into a lined or greased muffin pan and bake at 375°F for 25 minutes. While warm, sprinkle on the organic honey pollen garnish to “set”. Serve immediately while warm with some wild blueberry tea.

This particular quote resonates with me, a self-taught “Masterchef”, food stylist/photographer who has spent most of the last three decades in the kitchen. Although I am an educator by profession, my other passion lies in expressing myself creatively, through different forms of “art”. Aside from sketching, painting, dance, photography, music, DIY projects and home decorating, cooking and baking best allows me to find my “happy place” outside of work. After interacting with Willie at Ella’s Forest through social media for the last few months, and learning more about all the health benefits of wild blueberries, I began incorporating this amazing “superfood” into my healthy lifestyle…and the result? Simple and delicious recipes that are “too-good-to-be-healthy” which I’m so excited to share with you all!
